Food for thought - developing our menu

We spoke to Russell Norman, Operations Director of Caprice Holdings Limited, to find out more about Le Caprice's involvement in the design and implementation of our onboard menu.

Q: What are the main considerations when selecting food for Silverjet customers? 
A: The dishes are chosen on a seasonal basis and changed for summer and winter. The Chef Director at Caprice Holdings advises on the best produce and ingredients available for the season – very similar to how the menus are chosen in Caprice Holdings’ restaurants. The dishes are also adapted to ensure the best quality and flavour onboard, as taste buds change whilst in the air.
We also need to consider strong aromas not being too overpowering in the cabin.

We have found that the simpler the dish, the more successful it is - for example, one of the Le Caprice signature dishes, Salmon Fishcake with Parsley Sauce, flies very well and is very popular. When we ask Silverjet customers what they want to eat they often say they want simple "comfort" food.

Change to flight times

Following feedback from our business customers, we're changing the timing of our afternoon London - New York service to give customers almost a full working day in the office before heading to London Luton Airport. From 1 April 2008, our 105 flight will depart from London Luton at 18.00 (currently 16.45), and arrive at Newark at 21.00. It will depart from Newark at 22.30 (currently 21.55) and arrive at London Luton at 10.40 (next day).
